Yea, I saw mention of rinse, but in passing, and it wasn't clear how
new/supported it is - now I know. I'll investigate further and give it
a shot. And knowing that a stock Xen kernel worked for booting a
CentOS domU at least gives me a major data point, as I wasn't at all
sure if that was supposed to be possible.
