If you're using the default Xen setup for networking it will be
bridged; you'll see xenbr0 in your 'ifconfig' output ..
(I'm not clear on what you're asking there ..)

Well you have the xen choices of routed/bridged/natted setups.
Each of those will behave differently, and not all will use a bridge.

Not sure I'm afraid. I had the impression that ioemu was related
to using Qemu to emulate some things for hardware based virtualisation,
but I've not used it explicitly.
I'd imagine the Xensource.com manual/wiki would be a useful starting
point if you wanted to learn more. Or your favourite search engine ..
