  DHCP will be broken unless you add a DHCP package into the
 base install.  I *think* adding 'dhclient' into 
 /etc/rinse/centos-5.packages should be sufficient, but I admit
 I've not found time to fix this yet.

  I'd suggest that is the case.  If it works with static IP from
 scratch then changing the live system from DHCP -> static should
 work just as well...

  I'd just double-check the edits you've made.  Possibly looking
 at this might be useful:

    /usr/lib/xen-tools/centos-5.d/40-setup-networking
