Works for me, at least with current development version (which
will be released as 4.3 within the next days) and I can't remember having
changed something at that part of xen-tools:

Debian Squeeze amd64 as Dom0, Ubuntu Natty amd64 as DomU:

xen-create-image --hostname=test --lvm vg0 --dhcp --force --verbose --dist=natty --pygrub

Not sure. Maybe related to this:

Possibly Ubuntu has included some xen* modules in their kernels which
could make DomU booting fail to find the disk if they're missing.

The xen-create-image command-line you used. The xen-tools.conf
settings in case you changed them.
